Chicken and Vegetable Soup
This is a great idea for either cooking on the stove or simmering in a crock pot all day.
Ingredients:
1 tablespoon olive oil
1/2 pound skinless boneless chicken, cut into bite size pieces
1 onion, chopped
2 cloves garlic, minced
1 cup sliced carrots
1 cup broccoli florets
1 cup chopped cauliflower
1 cup chopped celery
2 cups whole peeled tomatoes with liquid, chopped
4 cups chicken broth
1 cup chopped fresh spinach
2 tablespoons hot pepper sauce
salt and pepper to taste
Directions:
Heat the oil in a large saucepan over medium heat. Add the chicken and saute for 5 to 10 minutes, or until browned, set aside.
To the same sausepan add the onion, garlic and carrots and saute for about 3 to 5 minutes. Then add the broccoli, cauliflower, celery, tomatoes, chicken broth and the set aside chicken.
Stir together well, bring to a slow boil, reduce heat to low and simmer for 25 to 30 minutes. Stir in the spinach, hot pepper sauce, sale and pepper to taste.
Heat thoroughly and enjoy.

The Spicy Taco 7 Layer Salad Recipe - For Those Who Love a Salad With a Little Kick
Ingredients for the Spicy Taco 7 Layer Salad Recipe:
3 cups of Romaine Lettuce
2 cups of Tortilla Chips (crushed)
1 1/2 cups of Yellow Onion (chopped)
1 pound of Ground Beef
1 1/2 cups of Sharp Cheddar Cheese (shredded)
2 cups of Salsa (medium flavored)
1 1/2 cups of Sour Cream
If you think that the salsa will be too hot for you, simply replace it with a mild version. And on the other side, if you'd really like to spice things up a bit, just add three tablespoons of hot sauce to the salsa. Or include some chopped up jalapenos to the recipe.
Directions:
1. Chop up the romaine lettuce and place in bottom of a large bowl for the first layer.
2. Take your crushed tortilla chips and distribute evenly over the lettuce to make your second layer.
3. Next, spread the yellow onion over the tortilla chips to form your third layer of the salad.
4. Cook up the ground beef in a frying pan. Make sure to remove as much grease off the meat as possible. Generally, I squeeze out most of the grease using a spatula, and then pat down the cooked beef firmly with a few pieces of paper towel. Spread ground beef over the onion for layer four.
5. Carefully spoon the salsa over all of the ground beef. This gives you the spicy fifth layer.
6. Generously spread the cheddar cheese over the ground beef for your next layer. If you do this shortly after the ground beef has been cooked, you get the cheese to melt into it.
7. For the final layer, you are going to evenly add the sour cream on top of the cheese.
8. Cover the salad bowl with plastic wrap. Place in refrigerator overnight.
9. When it comes time to serve the salad, just toss it quickly and add any additional spices and toppings.

Easy Meatless Meals

And if you decide you absolutely can't do without meat, any of these recipes could also be a great side-dish for a beef or chicken entree.
Black Bean Soup
2 tablespoons olive oil
1 clove garlic, crushed
½ cup chopped onion
2 15-ounce cans black beans, drained
1 15-ounce can diced tomatoes
1 small can green chiles
1 teaspoon dried thyme
¼ cup sour cream (optional)
Heat olive oil in a large saucepan. Saute onions and garlic in oil over medium heat until translucent, about 5 minutes. Add beans, tomatoes, green chiles, and thyme and simmer till hot, about 15 minutes. If using sour cream, add at the end of the simmering time. Do not allow soup to come to a boil after adding the sour cream or it will curdle.
Tomato Zucchini Casserole
2 large zucchini, sliced in rounds
2 large or 3 medium tomatoes, sliced
1 cup onion, thinly sliced
½ cup Parmesan cheese
salt and pepper
Preheat oven to 350°. In a greased casserole dish with a lid, layer half of the zucchini, tomatoes, and onion. Repeat layering with remaining ingredients. Sprinkle salt and pepper over, and top with Parmesan. Bake, covered, for 20 minutes. Remove cover and bake for about 15 minutes more to allow excess moisture to evaporate. Serve with crusty bread.
Potato Frittata
A frittata is an Italian version of quiche - and it's extra easy since there's no crust.
2 tablespoons butter or margarine
2 tablespoons olive oil
3 medium-sized baking potatoes, peeled and cut into 1/2-inch dice
3 tablespoons flour
¾ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon basil or oregano
8 eggs, beaten to blend
¼ cup Parmesan cheese
salt and pepper
Melt butter and oil in a heavy 10-inch skillet over medium heat. Mix potatoes with flour. Add potatoes, paprika, garlic powder, basil or oregano to skillet, and cook, stirring often, until potatoes are just tender, about 10 minutes.
Combine eggs with Parmesan cheese in medium bowl. Season with salt and pepper. Pour egg mixture over potatoes in skillet. Do not stir eggs - instead, pierce holes in egg mixture and lift edges with spatula, tipping pan to allow uncooked egg to flow underneath until an edge forms, about 1 minute. Reduce heat to low, cover skillet, and continue cooking until eggs are set, 10 to 12 minutes. When eggs are set, invert frittata onto platter and serve.

Scrapbooking For Children - Keep it Fun and Safe
There are a few precautions you can and should take to ensure the safety of your child. Ensure that the medium they are using (markers, paint or water colors, crayons, color pencils etc.) are non-toxic. This obviously depends on the age of your child.
Glitters can be quite a mess as well so if your child is not keeping it neat, try to buy them glitter glues rather than packs of glitters whereby if dropped or a strong wind blows, you'll have to spend your whole afternoon vacuuming! Don't forget to leave an empty plastic bag or rubbish bin next to your child and instruct them on throwing the waste from paper clippings in there.

Easy Sugar Cookie Recipe
1 1/2 cups butter/softened
1 cup of white sugar
1 cup of confectioners sugar
4 eggs
2 tsp vanilla
5 cups all-purpose flour
2 tsp baking powder
First, make sure your butter is softened. 1 1/2 cups of butter is three sticks. I soften them for 45 seconds in the microwave. You want them softened, not completely melted.
Next, add you white sugar a little at a time. Make sure it is mixed and finish mixing it on high. Then add the confectioners sugar, a little at a time with the mixer on a slow speed. After all the confectioners sugar is mixed in, once again, turn the mixer on high to really "fluff" up the mixture.
Now add the vanilla. I use clear vanilla to make my cookies look as white as possible. Next add the eggs, one at a time. Also, crack your eggs in a small bowl to make sure you don't get pieces of shell in your cookie dough.
Once you have your eggs mixed in, add your salt and baking powder. Then add the flour slowly and again, one cup at a time, keeping the sides of the bowl scraped clean with a spatula. It takes a little more time to add the ingredients slowly like this, but it really makes a difference in the quality of cookie.

Why is starving yourself to lose weight such a bad idea?

Back-to-School Breakfast Ideas and Recipes (Suitable For Diabetics, Too!
Kids love muffins. So make up a batch of these Oatmeal-Blueberry Muffins. Oats and blueberries are a couple of our best food products and here they are combined into a tasty muffin. Add a small carton of yogurt for a quick and tasty breakfast. If mornings are hectic for you, make the muffins before hand and warm before serving for breakfast.
OATMEAL-BLUEBERRY MUFFINS
1 cup + 2 tbsps flour
6 ounces uncooked regular oats
1 tbsp baking powder
2 tbsp Equal Sugar-Lite
1/2 tsp salt
1 cup skim milk
1 egg or 1/4 cup egg substitute
1/4 cup vegetable oil
1 cup fresh blueberries
Vegetable cooking spray
1 tsp ground cinnamon
In a medium mixing bowl, combine flour, oats, baking powder, Equal and salt. Make a well in the center of the mixture.
In a small mixing bowl, combine milk, egg and oil. Add to the well of the dry ingredients. Stir just until dry ingredients are moistened. Gently fold the blueberries into the mixture. Spray 12 muffin cups with vegetable oil spray. Fill each cup 2/3 full of the batter. Sprinkle cinnamon over the tops of the batter. Bake at 425 degrees for 20 to 25 minutes or until lightly browned.
French Toast Strata needs to be refrigerated overnight making it perfect if you like to make breakfast preparations the night before. Hop up in the morning, remove from the 'fridge, pop in the oven and breakfast is served by the time you are ready to face the day. For diabetics, add a couple strips of bacon or a sausage patty or link. There are apples in the strata so a fruit is incorporated into this meal.
FRENCH TOAST STRATA
1/3 cup granulated sugar substitute (I use Splenda)
1 cup egg substitute
2/3 cup skim milk
3/4 tsp vanilla extract
1 tsp maple-flavored extract
8 slices cinnamon-raisin bread
2 cups apples, peeled, cored, sliced thin
1/4 cup low-fat cream cheese
1 tbsp granulated sugar substitute (for this I use Equal Sugar-Lite)
1/2 tsp ground cinnamon
Spray an 8-inch square baking pan with non-stick cooking spray.
In a medium mixing bowl, blend together 1/3 cup granulated sugar substitute, egg substitute, milk and extracts. Tear bread into small pieces and toss into egg mixture. Add apples. Coat the bread evenly with mixture and pour into prepared pan. Cut cream cheese into 8 pieces and place strategically over the top of mixture. Blend cinnamon with 1 tablespoon of sugar substitute and sprinkle over the strata. Cover and refrigerate overnight.
Next morning preheat oven to 350 degrees. Remove strata from fridge and bake 40-50 minutes or until lightly browned and set. Serve immediately while hot.
Carbs 20g, Protein 7 g in each 1/8 of strata serving.

STRAWBERRY SPREAD
1 qt fresh strawberries
3/4 cup cold water, divided
2 tbsp lemon juice
1/4 tsp cinnamon
3 tbsp cornstarch
1 cup Equal Sugar-Lite
Wash, hull, finely coarsely chop berries. Combine in a small dutch oven or other heavy saucepan, strawberries, 1/2 cup water, lemon juice and cinnamon. Bring mixture to a boil, stirring well. Dissolve cornstarch in the remaining cold water and add to the boiling mixture. Reduce the heat and simmer a couple of minutes or until mixture thickens, stirring occasionally. Remove from the heat and cool. Stir in Equal after mixture has cooled down.
NOTE: This is good spread on toast or used as you might use jelly or jams.

MINI HAM & CHEESE FRITTATAS
1/4 lb cubed fully cooked lean ham
1 cup shredded fat-free cheddar cheese
1 1/2 cups egg substitute (or 6 eggs)
4 egg whites
3 tbsp minced chives
2 tbsp skim milk
1/4 tsp salt
1/4 tsp black pepper
Preheat oven to 375 degrees. Coat 8 muffins cups with nonstick cooking spray.
Divide ham evenly among the 8 muffin cups. Top ham with cheese. In a large mixing bowl beat eggs or egg substitute with egg whites. Beat in the chives, milk, salt and pepper. Pour this mixture over the cheese in muffin cups. Each cup should be about 3/4 full. Bake 22-25 minutes or until a knife inserted near center comes out clean. Carefully run a knife around edges to loosen. Remove from pan and serve warm.

Crockpot Swedish Meatball Recipe
A crockpot Swedish meatball recipe seemed ideal for me; Swedish meatballs are a dish that would only improve by marinating all day long. I came up with this, and although you can use frozen meatballs to make the super quick and easy version, I've included a very tasty recipe for homemade meatballs as well.
2 - 12 ounce packages frozen meatballs
1 cup water
½ tsp nutmeg
1 tsp minced onion
½ tsp garlic powder
½ tsp dill weed
½ tsp black pepper
4 ounces cubed goat cheese
1 cup sour cream
Spray crock pot with non-stick cooking spray. Mix all ingredients except cheese and sour cream in crock pot, cover and cook on low 6-8 hours to high 3-4 hours. Stir in cheese and sour cream, cover and cook on high an additional 30 minutes. Serve with noodles (the most traditional), mashed potatoes, or rice, and garnish with fresh parsley if desired.
Homemade Meatballs
4 pounds ground meat (I like to use 3 pounds ground chuck and 1 pound ground lamb, but any combination will do)
1 ¼ cup bread crumbs
3 eggs
½ cup water
¼ tsp allspice
1 tsp ground mustard
1 finely minced onion
Mix all ingredients together in large bowl (by hand works best). Roll into balls. Bake on slightly greased cookie sheets at 450 degrees for 10-15 minutes. Should be refrigerated and used within a few days, or can be frozen for up to 2-3 months.

Keeping Children Safe at School
Check to make sure your school has a safety plan and maintenance schedule for all playground equipment and fire equipment and that maintenance is up to date.
Check to see how many staff at your child's school have been trained in CPR.
Ask about the playground and the ground beneath the equipment. Is is cushioned, has it been updated and maintained. This won't prevent falls, but it can reduce the risk of severe injury.
Ask about the school policy on sports programs at your child's grade level. Guidelines which group children according to skill level, weight, and physical maturity provide a safer playing environment.
Make sure that proper physical and mental conditioning and use of safety equipment are included in all programs and are age appropriate.
Adults should be present at all times to ensure a safe playing environment and the enforcement of safety rules on playgrounds and during gym classes.
Teach children safe bus rules and street crossing rules to ensure kids watch before they cross and wait for the bus to stop before trying to get on. Kids need a reminder after a long summer vacation.
Teach children to stay seated on the bus regardless of what their peers do and to keep hands and feet inside.
Teach children to be aware of their surroundings. The old school rules of " don't talk to strangers" and " never take a ride from a stranger' are just as important today.
Have your child get a health physical from your family doctor on a yearly basis, even if your child doesn't participate in sports. This will make you more comfortable when your child is asked to push themselves in gym or other school activity.
Be an active participant in your school. Know who your child plays with and who they have contact with on a daily basis. Meet your child's teachers and keep in contact throughout the school year. Ask questions. You are the parent and the safety of your child is important. Make sure you are comfortable with the environment where your child learns. Do your research, ask questions, check with the Internet Better Business Bureau, make sure they have a money back guarantee. Do they have a physical address and phone number? Finally, you want to make sure that you invest the necessary amount of funds into your business. The last thing you want to happen is your hosting account shut down because you were too cheap to buy a hosting service that provided you with enough bandwidth to operate. I can't tell you how many sites I've seen get shut down because they tried to scrimp and save and run a half baked operation. If you're going to do this, do it right or don't do it at all.
A firm foundation will give your business a better chance of surviving past the first year. Once you've done that, the rest should be smooth sailing.
